I didn’t always think blueberries belonged in a goat cheese salad. Perhaps beets or pumpkin, but blueberries didn’t cross my mind.

But after I started experimenting with sweet and savory salad combinations — like my recent strawberry feta salad — I became a little more adventurous with fruit and cheese.

One day, I had blueberries and goat cheese sitting in the fridge, but I wanted to try something different from my simple blueberry goat cheese log. I wanted to add my spring mix and some crunch to it. So this goat cheese salad with blueberries was born.

Creamy cheese, sweet berries, crunchy pine nuts, and fresh greens tossed in a bright lemon dressing. It’s simple, colourful, and surprisingly balanced in flavour.

Pine nuts are rich in zinc, magnesium, and iron, and even contain a bit of protein too. So it’s a no-brainer when it comes to adding them to a salad. Plus, they are so delicately delicious.

Ingredients
  

  • 4 cups spring mix or baby spinach
  • 1 cup fresh blueberries
  • ½ cup creamy goat cheese crumbled
  • 1 avocado sliced
  • ¼ cup toasted pine nuts
  • Salt and pepper to taste

Lemon Dressing

  • 3 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
