Ingredients
  

  • 4 cups spring mix or baby spinach
  • 1 cup fresh blueberries
  • ½ cup creamy goat cheese crumbled
  • 1 avocado sliced
  • ¼ cup toasted pine nuts
  • Salt and pepper to taste

Lemon Dressing

  • 3 tablespoons fresh lemon juice
  • 2 tablespoons olive oil

Instructions
 

  • Add washed mixed greens to a large bowl.
  • Scatter blueberries, avocado slices, and toasted pine nuts over the top.
  • In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently.
  • Finish by sprinkling crumbled goat cheese and fresh dill on top.
