Cottage Cheese Queso (Easy High-Protein Recipe)

By Liv Banks•Published: Nov 2024, Updated: Oct 2026

This easy cottage cheese queso is creamy, cheesy and ready in under 10 minutes, with around 24g of protein per serving.

I’ve learnt that cottage cheese queso can split surprisingly quickly when it gets too hot, making it watery, so I tested a simple way to keep it creamy while heating it properly — because who wants lukewarm queso?

I tested this queso at different temperatures and found that without a stabilizer, it stayed creamy while gently warmed but quickly released whey and became rubbery once it got hotter. Adding just ⅛ teaspoon of xanthan gum solved the problem, giving me a hot, creamy queso without the watery separation.

Don’t have xanthan gum? You can still make the queso without it. I’ll show you how — you’ll just need to keep the heat lower.

Why You’ll Love This Cottage Cheese Queso

  • Ready in under 10 minutes. From blending to heating, this is a genuinely quick queso dip.

  • High in protein. One serving of this queso is around 20g of protein. Sometimes I even have it for lunch with low-carb corn tortilla chips and veggies.

  • Low in carbs. The main ingredients are cottage cheese, shredded cheese, and taco seasoning, keeping the carb count low. Around 7g of carbs per serving, which is half of the batch we are making.

  • Made with simple ingredients: Only 3 main ingredients and optional xanthan gum to keep the queso from splitting when heated.

  • Lighter, but still cheesy and creamy. Cottage cheese creates a creamy queso that’s lower in calories than many traditional queso dips while still giving you that warm, melty cheese satisfaction.

  • Actually designed to be served hot. After testing how cottage cheese behaves at different temperatures, I found a simple way to keep the queso creamy without the watery separation that can happen when it gets too hot.

  • Can be served as a high-protein lunch: You can pair it with tortilla chips and some fresh veggies and turn it into lunch.

Ingredients You'll Need

You only need four ingredients to make this high-protein cottage cheese queso.

  • Low-fat cottage cheese: I use around 1 cup (220 g) of low-fat cottage cheese, drained of any visible excess liquid. Blend it until completely smooth for a creamy queso without noticeable curds.

  • Mexican-style shredded cheese: Half a cup adds the cheesy flavor and melted texture you expect from queso. I’ve also tested this recipe with a shredded pizza cheese blend, which works well.

  • Taco seasoning: Two teaspoons give the queso plenty of flavor without overpowering the cheese. I tested this recipe using Mingle Mexican Fiesta Taco Seasoning and preferred this amount because it wasn’t overly salty. Other seasoning blends may vary in saltiness and heat.

  • Xanthan gum: Just ⅛ teaspoon helps keep the queso creamy as it heats, without making the texture unnecessarily thick. You can pick it up at most local grocery stores; just check the aisle where gelatin, cake decorating, and baking ingredients are.

4th Ingredient That Makes The Difference: Why I Use a Little Xanthan Gum

During recipe testing, I found that cottage cheese queso could become watery when heated beyond gently warm. Without a stabilizer, my mixture began releasing whey and developing a rubbery texture as I increased the heat.

I initially tested ¼ teaspoon of xanthan gum, which worked well for freshly cooked queso. However, after refrigerating and reheating leftovers, I noticed the texture had become slightly gummy.

So I reduced the amount.

In my latest test, just ⅛ teaspoon of xanthan gum was enough to prevent visible weeping during microwave heating and the optional broiling step.

I also tested ½ teaspoon, but that made the queso too gummy. This goes to show, that a little goes a long way. You can also use xanthan gum in other cottage cheese recipes like pizza bowls.

The goal is to use the smallest amount that keeps the cheese creamy without making it overly thick.

You can make the queso without xanthan gum, but in my earlier tests, the mixture separated when heated beyond gently warm.

How to Make Cottage Cheese Queso

You can make this queso on the stovetop or in the microwave. Both methods start with the same four ingredients.

Step 1: Blend the Cottage Cheese

Add the drained cottage cheese, taco seasoning and ⅛ teaspoon of xanthan gum to a food processor or high-powered blender. Blend until completely smooth.

Step 2: Add the Cheese

Stir in the shredded Mexican-style cheese until evenly combined. You can do this directly in the stovetop pot if you choose to cook it that way.

Step 3: Heat the Queso

Microwave method

Transfer the mixture to a microwave-safe bowl. Microwave for 30 seconds, stir thoroughly, then microwave for another 30 seconds.

This method was tested using my 1100 W microwave, which is considred high setting. Cooking times may vary depending on your microwave’s wattage.

Stovetop method

Transfer the mixture to a small saucepan and heat over medium heat, stirring frequently, until the shredded cheese melts and the queso becomes creamy and heated through.

Avoid prolonged heating or boiling, as excessive heat may cause the mixture to separate.

Step 4: Serve or Add a Golden Cheese Crust

You can serve the queso straight away, or give it a golden, cheesy topping like the one in my photos.

For the golden finish, transfer the heated queso to an oven-safe ramekin, sprinkle with approximately 1 tablespoon of extra shredded Mexican-style cheese and place under the oven grill (broiler) for 5 minutes, until the top is golden.

I tested this finish after microwaving the queso, and it developed a golden crust without separating or overcooking.

My Recipe Tips For The Creamy Cottage Cheese Queso

  • Use only ⅛ teaspoon of xanthan gum. More isn’t necessarily better. I found that ¼ teaspoon became slightly gummy after reheating, while ½ teaspoon made the texture too thick. So measure carefully.

  • Blend the cottage cheese thoroughly. A smooth base helps produce a creamy dip without noticeable cottage cheese curds.

  • Stir between microwave intervals. Two 30-second intervals work well on high setting.

  • Avoid overheating. During testing, the queso without xanthan gum separated when heated too far. Keep an eye on the mixture rather than heating it for longer than necessary.

  • Adjust the taco seasoning to taste. Two teaspoons were enough for me, but if you like it saltier and spicier, you can try to add a little extra. Some US taco seasoning blends contain more salt, so check the seasoning before adding extra. You can even taste your queso before heating it, and see if you need a bit more.

Serving Suggestions

Serve cottage cheese queso hot with your favorite tortilla chips, or try my homemade keto tortilla chips for a lower-carb option.

Fresh vegetables such as bell pepper (capsicum), cucumber and celery are also great for dipping.

I particularly like finishing the queso with a squeeze of fresh lime juice, thinly sliced green chili and fresh cilantro (coriander). These fresh toppings add a lovely contrast to the rich, melted cheese.

You can also spoon the queso over tacos, nachos or burrito bowls for an easy protein-rich topping.

Storage and Reheating

Store leftover cottage cheese queso in an airtight container in the refrigerator.

Freezing: If you are using xanthan gum, the queso can be reheated in the microwave. I would recommend using a medium setting, though, and do it in intervals; stir it between each interval until heated through.

Frequently Asked Questions

Yes. In my testing, the queso stayed smooth without xanthan gum when gently warmed, but separated into watery whey and thicker cheese solids when heated further. Using ⅛ teaspoon of xanthan gum helped keep my queso creamy during cooking.

Cottage cheese queso can become watery because cottage cheese releases whey when overheated, causing the mixture to separate. To help prevent this, drain excess liquid before blending and heat the queso gently. During my testing, adding a small amount of xanthan gum also helped keep the dip creamy and prevented it from separating.

Yes, you can make cottage cheese queso in the microwave. I tested this recipe in an 1100 W microwave using two 30-second intervals, stirring between them. The queso stayed creamy with ⅛ teaspoon of xanthan gum. Cooking times may vary depending on microwave wattage.

Yes, low-fat cottage cheese works well for making queso. I developed this recipe using low-fat cottage cheese, draining any visible excess liquid and blending it until smooth before adding the shredded cheese and taco seasoning.

Cottage cheese queso can fit into a keto diet, depending on the ingredients, serving size and your daily carbohydrate target. This recipe contains approximately 8 g of total carbohydrates per serving, based on two servings per batch. Notes

Xanthan gum: I tested several amounts and found that ⅛ teaspoon was enough to prevent visible weeping during cooking. Using more can make the queso gummy, especially after reheating.
Without xanthan gum: You can omit it, but heat the queso gently and stop once warmed through. My queso began separating when I heated the mixture further without xanthan gum.
Microwave: The 60-second microwave method was tested using an 1100 W microwave. Adjust the time according to your microwave's wattage.
Golden cheese topping: Transfer the heated queso to an oven-safe ramekin, sprinkle with approximately 1 tablespoon of extra shredded Mexican-style cheese and place under the oven grill/broiler for 5 minutes, until golden.
Cheese: A shredded pizza cheese blend also works well if you don't have Mexican.
Seasoning: I used Mingle Mexican Fiesta Taco Seasoning. Other brands vary in saltiness and heat, so adjust to taste.
