This cottage cheese banana bread is soft, moist, naturally sweetened with ripe bananas and coconut sugar or allulose, and packed with wholesome ingredients. Blended cottage cheese adds a sneaky boost of protein without changing the classic banana bread flavor, making it a delicious option for breakfast, snacks, or meal prep.

I developed this cottage cheese banana bread recipe using a tall loaf pan to create thick, bakery-style slices. The loaf stays beautifully moist thanks to four ripe bananas and blended cottage cheese, and the banana slices baked on top make it look just as good as it tastes. It’s another delicious version of a healthy banana bread that I made in the past by adding grated zucchini, except this one is higher in protein.

Banana bread is already one of the easiest homemade treats to make, but adding blended cottage cheese takes it to another level.

Instead of tasting cheesy, the cottage cheese melts into the batter and creates an incredibly moist texture while adding extra protein. Combined with overripe bananas, whole wheat flour and just the right amount of sweetness, it creates a loaf that’s soft, fluffy and satisfying without feeling overly heavy.

During testing, I found that baking the loaf in a tall loaf pan produced the best results. Because the loaf is deeper than a standard banana bread, it needs a slightly longer baking time and benefits from being covered with foil for the first part of baking. This simple step prevents the banana topping from browning too quickly while allowing the centre to bake through perfectly.

The result is a beautiful homemade loaf with a tender crumb, rich banana flavor and just enough sweetness to satisfy without being overly sugary.

Ingredients You'll Need

Overripe Bananas

You’ll need 4 ripe bananas for this recipe.

  • 3 large bananas, mashed into the batter.
  • 1 banana, sliced for the topping.

The riper the bananas, the sweeter and more flavorful your banana bread will be.

Cottage Cheese

Use 1½ cups cottage cheese for a tall loaf tin or 1 cup for a standard loaf pan.

Blend the cottage cheese with the eggs and vanilla until smooth before adding it to the batter. This creates a soft, moist crumb while adding a boost of protein.

Both full-fat and reduced-fat cottage cheese work well.

Whole Wheat Flour

Whole wheat flour adds extra fiber and gives this banana bread a wholesome texture while keeping it soft and moist.

Eggs

You’ll need 2 large eggs to bind the batter and help the loaf rise.

Coconut Sugar or Allulose

Use ½ cup coconut sugar, raw brown sugar or allulose.

Coconut sugar adds a subtle caramel flavor, while allulose is a great lower-sugar alternative.

Butter or Olive Oil

Use 4 tablespoons melted butter or olive oil.

I tested this recipe with less fat, but the loaf turned out noticeably drier. Four tablespoons gave the best balance of moisture and flavor.

Vanilla & Cinnamon

Vanilla enhances the banana flavor, while cinnamon adds warmth and that classic homemade banana bread aroma.

Baking Powder

Baking powder helps the loaf rise, creating a lighter texture when using whole wheat flour.

Salt

A small amount of salt balances the sweetness and brings out the banana flavor.

If you’re using salted butter and a particularly salty cottage cheese, you can leave it out.

Which Loaf Pan Should You Use?

I have a wonderful tall pan, which I love to use, because it creates thick, bakery-style slices as you see in the photos. You can pick it up on Amazon here. But if you have a loaf pan with lower sides like the one pictured on the right, don’t worry; I included amounts for this one below. 

Because loaf tins/pans vary quite a bit, I recommend comparing yours with the one shown below before choosing which version to make. 

Tall Loaf Pan

Use:

  • 2 cups whole wheat flour
  • 1½ cups cottage cheese
  • 3 large mashed bananas
  • 1 banana for topping

This creates a tall, impressive loaf with generous slices. Note: Your loaf pan will only be half full when you pour the batter in, it will raise as it bakes. 

Low Loaf Pan

If you’re using a regular loaf pan, reduce the batter slightly to prevent overflowing.

Use:

  • 1½ cups whole wheat flour
  • 1 cup cottage cheese
  • 3 small bananas (or 2 large bananas) mashed into the batter
  • 1 banana for topping (optional)

Everything else stays exactly the same.

The loaf will be slightly shorter and may finish baking a little sooner, so begin checking it a few minutes before the suggested baking time.

How to Make Cottage Cheese Banana Bread

1. Prepare the oven and loaf pan

Preheat your oven to 350°F (180°C).

Line a tall loaf tin with parchment paper, leaving some overhang on the sides so you can easily lift the bread out once it’s baked.

If you’re using a standard loaf pan, use the reduced ingredient amounts listed above.

Step 2: Mash The Bananas

In a large bowl, mash three ripe bananas until mostly smooth, try to get larget chunks broken up so the loaf comes out smoother. 

Step 3: Blend The Cottage Cheese

Add the cottage cheese, eggs, melted butter or oil and vanilla essence to a blender or food processor and blend until completely smooth.

This only takes about 20–30 seconds but makes a big difference to the final texture. Once baked, you won’t notice the cottage cheese at all—it simply creates an incredibly moist loaf.

Step 4: Combine The Ingredients

In a large bowl, mix together the whole wheat flour, sugar or allulose, cinnamon, baking powder, baking soda and salt if using.

Add the mashed banana and the wet blended mixture into the dry ingredients. Using a sturdy spatula mix all the ingredients together well so everything is evenly combined. The batter should look thick and not too easy to pour, you should be able to lift it with the spoon.

Step 5: Fill The Loaf Pan and Add The Topping

Pour the batter into the prepared loaf pan. Using a spatula to help scoop all of it out of the mixing bowl. 

Spread the top evenly.

If you like, place a few slices of banana on top for a decorative finish. You can also sprinkle a bit of coconut sugar for a gorgeous caramelised top. 

Step 6: Bake

Cover the loaf loosely with aluminum foil and bake for 40 minutes. Or you can fold the excess side flaps of the baking paper together and clip them with a metal paper clip, that’s what I usually do. 

Remove the foil or unfold the baking paper sides, and continue baking for another 30 minutes, or until a skewer inserted into the centre comes out clean or with only a few moist crumbs attached.

Because this recipe is baked in a tall loaf pan, the centre takes longer to cook than a traditional banana bread. During testing, I found that baking it uncovered for the full time caused the top to brown too quickly, while covering it for the first 40 minutes produced a perfectly baked loaf every time.

Allow the banana bread to cool in the pan for about 20 minutes before slicing it, if you rush the slicing while the banana bread is hot, it may cumble a bit too much.

Tips For Success

Note: The size of the tall loaf tin used in this recipe is approximately 9.5 x 4.5 x 4.5 inches (approx. 24 x 11 x 11 cm).
  • The riper your bananas, the sweeter and more flavorful your banana bread will be.
  • Blend the cottage cheese until completely smooth for the best texture, you can do it together with other wet ingredents.
  • Don’t overmix the batter or the loaf can become dense.
  • Cover the loaf for the first part of baking to prevent the top from browning too quickly.
  • Every oven is different, so always test the centre with a skewer before removing the loaf from the oven.
  • The loaf slices much more neatly once completely cooled..

Optional Add-Ins

This recipe is delicious exactly as written, but if you’d like to change it up, try folding one of these into the batter before baking:

  • Dark chocolate chips
  • Dried cranberries
  • Raisins or sultanas
  • Chopped walnuts
  • Pecans
  • Fresh blueberries
  • Unsweetened shredded coconut
  • Chia seeds or flax seeds

Choose just one or two additions so the loaf stays light and bakes evenly.

Once completely cooled, slice the loaf and place pieces into a freezer-safe bag or airtight container with baking paper between each slice.

Freeze for up to 3 months.

Simply thaw overnight in the refrigerator or warm individual slices in the microwave or toaster whenever you’re craving homemade banana bread.

Ingredients
  

  • 4 medium bananas only 3 of the mashed and reserve one for topping
  • cups cottage cheese
  • 2 large eggs
  • ½ cup raw sugar, or coconut sugar, or allulose
  • 4 tablespoons melted butter or olive oil
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt only if using un-salted butter

Instructions
 

  • Preheat oven to 350°F (180°C) and line a tall loaf pan with parchment paper.
  • Blend the cottage cheese with eggs, butter or oil and vanilla essence until completely smooth.
  • Mash the bananas in a large bowl.
  • Mix all the dry ingredients in a large bowl.
  • Add wet ingredients and the mashed banana inot the dry ingredients and mix really well together.
  • Scoop the batter into the prepared loaf pan and smooth the top.
  • Arrange the sliced banana over the batter.
  • Cover loosely with foil and bake for 40 minutes.
  • Remove the foil and continue baking for another 30 minutes, or until a skewer inserted into the centre comes out clean.
  • Cool in the pan for 15 minutes before transferring to a wire rack. Cool a bit longer before slicing for cleaner cut.

Notes

  • This recipe was developed using a tall loaf pan so try to use the same if you have one.
  • For a low loaf pan, use 1½ cups whole wheat flour, 1¼ cups cottage cheese, and 3 small (or 2 large) bananas in the batter instead. Everything else remains the same. This will bring down the volume of the batter and fit into a low loaf pan. 
  • Optional add-ins include chopped walnuts, pecans, dark chocolate chips, shredded coconut or fresh blueberries.
  • Store leftovers in an airtight container for up to 8 days or freeze for up to 3 months, individually wrapped slices.
