If you had told me a few years ago that I’d eventually have an entire collection of almond flour recipes on my website, I probably would have laughed and gone back to eating my almond flour brownie, the only thing I knew how to make at the time.

At first, I was simply looking for alternatives to traditional baking ingredients. Over the years, I’ve worked with many clients who experience bloating, digestive discomfort, or afternoon energy crashes after certain meals. Some have celiac disease, while others simply feel better when they reduce gluten or rely less on traditional breads and baked goods.

I also knew almonds were packed with healthy fats, protein, fiber, and nutrients. So I thought, why not experiment with a few recipes with almond flour and see what happens?

What started with a simple batch of brownies quickly turned into something much bigger.

Around my 45th birthday, I decided to take things up a notch and create a rich almond flour cake. Then came muffins. Then crackers. Before I knew it, I was rolling out tortillas, testing pizza crusts, and discovering just how versatile almond flour can be.

Many of these recipes are naturally gluten-free and lower carb than traditional baked goods. You’ll also notice that I often use natural sweeteners instead of large amounts of refined sugar. It’s simply the style of baking I enjoy and one that many of my readers appreciate as well.

Why I Started Baking With Almond Flour

One thing I’ve learned over the years is that there isn’t one single way of eating that works for everyone. Some people thrive on traditional breads and baked goods. Others feel better when they reduce gluten or experiment with different ingredients. I started baking more with almond flour because I wanted another option.

Almond flour is naturally gluten-free, lower in carbohydrates than traditional flour, and contains healthy fats and protein from almonds. 

What surprised me most wasn’t the nutrition side of things. It was how many different recipes I could create with it.

I originally expected almond flour to be useful for cakes and brownies. I certainly wasn’t expecting it to work in crackers, tortillas, pizza crusts, pie crusts, biscuits, and savory baking recipes, too.

The more I experimented, the more I realized there was a whole world beyond almond flour desserts.

What Makes Almond Flour Different?

Unlike regular flour, almond flour is made from finely ground almonds. It’s one of my favorite flours for gluten-free baking because it behaves very differently from traditional wheat flour.

The best part is that almond flour can create several completely different textures depending on the recipe.

It Works In Sweet And Savory Recipes

This is probably what surprised me most. The same bag of almond flour that helps create fudgy brownies can also become tortillas for tacos, crackers for a cheese board, or the base for a savory quiche.

For most recipes, I recommend using fine blanched almond flour. This means the almond skins have been removed before grinding, creating a finer texture and more consistent results.

Almond Flour Browns Faster

Because of its natural fat content, almond flour tends to brown more quickly than traditional flour. Think about how quickly nuts can toast in the oven. The same principle applies here.

Keep an eye on your baked goods toward the end of baking time and don’t be afraid to set a timer. It’s surprisingly easy to get distracted and forget you have a pie crust or batch of muffins turning a little too golden in the oven.

Structure Matters

Since almond flour doesn’t contain gluten, ingredients like eggs, psyllium husk, cottage cheese, or Greek yogurt often play an important role in creating structure.

Don’t be tempted to skip them. They help provide the support that gluten would normally contribute in traditional baking.

Some almond flour recipes contain no dairy, like my crackers, tortillas, and even pizza crust (if you skip the parmesan cheese).

Yes, sometimes ingredients like Parmesan are more about flavor than structure, which is why I encourage you to read the steps carefully before diving into your almond flour.

I always mention if the ingredient is optional, and if I don’t, that means it needs it for best results.

Are These Recipes Low Carb or Keto?

Glad you asked. Yes, most of these recipes are low in carbs, and most of them are keto-friendly, except for the banana muffins and my upcoming banana bread recipe. Because of the bananas, technically, they don’t classify as proper keto, but they are still much lower in carbs than traditional banana muffins and breads. 

Yes, even the muffins, brownies, and chocolate cake are all sugar-free. I use natural low-sugar alternatives, which you will find in the recipes. Cause if I am going to be baking healthy, I may as well use a healthier sweetener too.
