Choosing the Right Yogurt (This Matters)

For the best Ninja Creami frozen yogurt, I recommend full-fat yogurt, especially when you’re starting out.
Look for:
- Plain Greek yogurt or thick natural yogurt
- Live cultures listed on the label (such as Lactobacillus acidophilus or Streptococcus thermophilus)
- Unsweetened varieties

Sweeteners: What I Use & Why
I keep sweetness simple and flexible.
Most of these recipes use:
- Organic raw honey
- Pure maple syrup (not the maple-flavored syrup that is made with refined sugars)
- Fresh fruit (especially fresh strawberries and berries or seasonal fruit)
- Unrefined raw coconut sugar or unrefined raw regular cane sugar (minimally processed and unbleached)
If you want to reduce sugar intake further, monk fruit sweetener also works well — just know the flavor will change slightly.
Achieving Creamy Smooth Texture
If you use full-fat yogurt, you can skip thickeners entirely.
If you use low-fat or non-fat yogurt, a small amount of gum helps replace the creaminess that fat normally provides.
When needed, I use:
- ¼ teaspoon xanthan gum (natural, gluten-free, non-GMO)
- ⅛ teaspoon guar gum (natural, gluten-free, non-GMO)
Xanthan gum stabilizes the yogurt mixture and limits iciness; it’s my absolute go-to when I am making light ice creams or low-fat frozen yogurts.
Guar gum improves softness and creamy mouthfeel. It also helps to keep the leftovers creamy, even if you put half of the unfinished pint back in the freezer.
Guar gum is strong — more is not better. If you only want to use one, stick with xanthan gum. Both are plant-based and optional.

- 3 tbspns of cocoa powder unsweetened
- 4 tbspns of raw natural cane sugar or coconut sugar add more if needed
- 1 tbspn of vanilla extract optional for more flavor
- 1/4 tspn of xanthan gum if using low-fat yogurt
- 1/8 tspn of guar gum if using low-fat yogurt
Instructions
- Using a stick blender, directly in the Ninja Creami pint container, blend together the Greek yogurt, cocoa powder, sweetener, xanthan and guar gums if using, and vanilla until completely smooth. Or use a regular blender and transfer the blended mixture into the pint after.
- Freeze for approximately 20-24 hours, or until completely solid.
- Spin on Light Ice Cream mode.
- If crumbly, add 1–2 tablespoons milk or yogurt and re-spin until creamy.
