- Either drain your cottage cheese of the excess liquid before blending or let it sit for a bit after blending and drain as much liquid as possible.

- DID YOU KNOW – that this liquid is what whey protein is made of? So don’t throw it away, just drink it, seriously, it’s almost pure protein. But it would make the cottage cheese cookie dough too runny if you leave it in.

- Add in all the rest of the ingredients except chocolate chips, as you will fold them in at the end after everything is blended.
- If your dough is too runny, you can adjust by adding more almond flour or protein powder. But if you follow the exact instructions, it should come out just right.

Ingredients
- 1/2 cup cottage cheese low fat
- 1 cup fine almond flour
- 1 tbsp natural peanut of cashew butter
- 1 scoop clean vanilla powder this will help the texture of the cookie dough not to be runny
- 1/2 tsp regular or sugar free maple syrup you might not need this if using sweetened protein powder, try it first to see if it's sweet enough before adding
- 1 tspn vanilla extract natural vanilla extract is best
- 1 pinch salt to balance out the sweetness (unless your cottage cheese is already a bit salty)
- 2 tbsps dark chocolate chips you can use sugar free version if you like
Instructions
- Drain the Liquid: Before blending the cottage cheese, drain out the liquid. You can also do this after blending the cottage cheese, but you will need to let it sit for about 15 minutes so it has time to separate again.
- Blend the Cottage Cheese: First blend the cottage cheese until it becomes smooth and creamy, similar to cream cheese texture.
- Add in Other Ingredients: Add almond flour, protein powder, vanilla essence, and salt if using, and blend again until everything is mixed well together. It should start taking on the cookie dough texture at this point and become more sticky.

After gastric sleeve any protein with some zero sugar is yummi. I like the recipe but wish there was a way to thicken it up with no kind of flour. But, I am happy I learned of almond and oat flour. I’m only in my 5th month and finding recipes and time to make has been a challenge. Doing good tho.
Try my cottage cheese cake recipe, you can do without the almond flour crust, and if you don’t mind adding eggs and baking it, it will turn out nice and solid. But it is a baked recipe so a little more effort, but you can make it for a few days ahead, it’s really nice. Well done on sticking to you diet, it’s not easy after gastric sleeve, a lot of food can trigger indigestion, so I can imagine it’s challenging. You’ve got this!
Could this be made with oat flour?
Hi Virginia, yes you can, but it won’t be low carb anymore, if you don’t mind the carbs than it’s totally fine. To be honest I haven’t tried it so if you make it please let me know how it turns out, I think the taste will be fine, the texture might be a little different though, perhaps a bit smoother and mushier.

Yes, you can freeze it Tara, just mix it up again with a spoon after you thaw it out, I wouldn’t microwave it though.
