Ingredients
  

Ingredients for This Strawberry Feta Salad

  • 4 cups fresh greens spring mix or baby spinach
  • 2 cups sliced fresh strawberries use ripe, but firm strawberries
  • 1 large cucumber diced
  • 2 tablespoons finely diced red onion (optional)
  • ¼ cup chopped pecans or walnuts
  • ½ cup crumbled feta cheese Greek or any type you like
  • 2 tablespoons fresh mint (optional)

Honey Lemon Dressing

  • 3 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Pinch of salt

Instructions
 

  • Add your fresh greens to a large bowl.
  • Top with strawberries, cucumber, red onion, and pecans.
  • In a small bowl, whisk together lemon juice, olive oil, honey, and salt.
  • Drizzle the honey lemon dressing over the salad.
  • Toss gently to combine.
  • Sprinkle crumbled feta and fresh mint on top.
