TikTok made me try this cottage cheese pizza bowl trend, and honestly… I fully expected it to be terrible. But when your girl sees an easy high-protein cottage cheese recipe going viral online, there’s absolutely no way I’m not trying it at least once 😄

I’ve been on a bit of a cottage cheese obsession lately, testing everything from cottage cheese flatbread to scrambled eggs with cottage cheese, so naturally these viral cottage cheese pizza bowls ended up on my radar too.

And surprisingly, they actually work.

This recipe actually reminds me a little of my cottage cheese queso recipe. The base has that same warm, cheesy comfort-food vibe, except these pizza bowls feel more like a proper high-protein meal rather than a dip for chips.

They’re warm, cheesy, packed with pizza flavor, and surprisingly satisfying for something made mostly with cottage cheese. The texture lands somewhere between a creamy pizza bowl, a cheesy pizza bake, and a crustless pizza casserole — all while delivering the flavors of pizza in a lighter, lower-carb format.

Each individual bowl contains around 18–22 grams of protein, depending on your favorite toppings, while still staying relatively low in carbs and calories compared to traditional pizza. That makes this a great recipe for anyone focusing on protein intake, weight loss goals, meal prep, or simply looking for an easy pizza night alternative.

Unlike the large baking dish version I originally experimented with, these work much better baked in larger individual ramekins or small oven-safe bowls. I’m not talking about those tiny crème brûlée ramekins here — these are more like generous single-serve pizza bowls that hold around 1 to 1½ cups each.

To make one individual single-serve pizza bowl, here’s what you will need. 

  • 1/2 cup cottage cheese, well drained, or farmers’ cheese (which has less moisture)
  • 2 tablespoons pizza sauce or marinara sauce
  • 3 tablespoons mozzarella cheese or pizza blend cheese
  • 1/4 teaspoon Italian seasoning
  • Pinch of garlic powder
  • Pinch of onion powder
  • Black pepper, to taste

The texture of cottage cheese can vary a lot between brands, and that directly affects the final texture of this recipe.

For best results, use:

  • small curd cottage cheese
  • full-fat cottage cheese
  • thicker cottage cheese with less liquid

Good Culture cottage cheese works especially well because it tends to be creamier and less watery.

If your cottage cheese contains excess liquid, drain it well before baking. This helps reduce moisture in the final bowls.

You can also use farmer’s cheese if you can find it. Farmer’s cheese is much firmer and drier than regular cottage cheese, which creates a less moist and more casserole-like texture.

Some people also like using blended cottage cheese for a smoother texture, but I personally prefer keeping some texture in the cottage cheese mixture.

Optional Homemade Pizza Sauce Trick

One thing I discovered while testing this cottage cheese pizza bowl recipe is that some pizza or marinara sauce brands are simply too watery for this recipe. But you can easily make your own that will turn out the right consistency.

For a thicker instant sauce option, mix:

  • 2 tablespoons of pure tomato paste
  • 1 tablespoon water
  • tiny pinch of salt
  • tiny pinch of monk fruit sweetener or sweetener of choice, this is to balance out the sourness of the tomato paste

This creates a quick homemade pizza sauce with a thicker consistency that works really well for this recipe.

Just mix everything well together and it’s ready to mix into your cottage cheese pizza bake.

How to Make Cottage Cheese Pizza Bowls

Step 1: Preheat the oven

Preheat your oven to 400°F (200°C).

Step 2: Drain the cottage cheese

If your cottage cheese looks watery, transfer it to a strainer and let excess liquid drain for a few minutes.

This helps improve the texture and prevents excess moisture from collecting in the bottom of the bowls.

If you can find farmer cheese, I mentioned earlier, it would be ideal. Farmer cheese has very similar protein and calories, just less moisture so you won’t need to drain it.

Step 3: Prepare the cottage cheese mixture

In a small bowl, combine:

  • cottage cheese
  • pizza sauce or tomato sauce
  • Italian seasoning
  • garlic powder
  • onion powder
  • black pepper

Mix until fully combined.

Step 4: Fill the ramekin

Transfer the cottage cheese base into one larger ramekin or small oven-safe bowl. Mine holds around 1 to 1½ cups total, which gives enough room for the toppings and bubbling cheese without overflowing.

Top with mozzarella cheese and your favorite pizza toppings.

Step 5: Bake until bubbly

Bake for about 15 minutes or until the cheese melts and the tops look lightly golden.

The bowls will still be creamy in the center, but letting them rest for a few minutes helps the texture settle.

Step 6: Finish and serve

Top with fresh basil, parmesan cheese, or red pepper flakes before serving.

Serve warm while the cheese is still melty and bubbly.

Why Is My Cottage Cheese Pizza Bowl Watery?

Cottage cheese naturally contains whey, which releases moisture during baking.

To help reduce excess moisture:

  • Drain the cottage cheese well, for about 15 minutes in a sieve over a bowl before cooking
  • Use thicker cottage cheese or farmer cheese (which is very similar to cottage cheese, but has less moisture)
  • Avoid overly watery marinara sauce, swap for a tomato paste-based sauce you can make yourself (see tips above), very easy
  • Use smaller individual bowls instead of a large baking dish
  • Let the bowls rest before serving

Even with these tips, cottage cheese pizza bowls are naturally softer and creamier than traditional pizza.

    This turned out great and very tasty, but the bottom was a bit watery, is there anything I can do to prevent that from happening next time?

    1. I improved the recipe and added more tips Joanne, check them out. The last few batches I made were not watery. Draining cottage cheese helps, but I discovered using farmer cheese (very similar to cottage, but dryer) really helped solve this issue.
