Pancakes have always been a weekend special in my kitchen, because usually there’s a little more time to make them. I love how versatile they can be, far beyond the classic flour, egg, and milk version. Banana cottage cheese pancakes are my latest favorite twist because they use no flour and are great for those who can’t tolerate gluten.

You only need a few ingredients for banana cottage cheese pancakes. Use ripe bananas for natural sweetness. Eggs and cottage cheese provide extra protein.

A dash of baking powder makes them fluffy. Vanilla extract adds flavor. You can use low-fat or full-fat cottage cheese, whatever you prefer.

An essential step if you want to avoid lumpy curds in your pancakes is to blend your cottage cheese until it’s completely smooth and creamy before adding the rest of the ingredients. If you don’t mind the curd, then skip this step and add it as is.

Mash the bananas

Then mash your bananas well in a bowl. Add eggs and blended or unblended cottage cheese. Mix well until combined.

If you want extra flavor, add vanilla extract. Sprinkle in baking powder for lift. 

If you want a protein boost, add protein powder. Stir it in gently. The batter should be thick but pourable.

Add This Secret Ingredient To Make Them Fluffy (Important)

Well, not so secret anymore, here is what I add to make these cottage cheese pancakes fluffy, without flour, flax or oats. 

Xanthan gum, yes, I use this magic gluten-free powder everywhere, just one teaspoon is all you need to fluff up these babies. And it doesn’t make them go dense or grey like buckwheat flour or flax seeds, which I tried before.

What is xanthan gum, you might ask? 

Xanthan gum is one of my go-to natural ingredients when creating gluten-free breads or sauces that need a little more structure—it’s naturally gluten-free, contains no carbs, and is basically calorie-free.

Xanthan gum is made by fermenting simple sugars, usually from corn, wheat, or soy, with the Xanthomonas campestris bacterium. However, it is gluten-free and even keto-friendly. The fermentation process takes care of that. 

The studies have concluded that xanthan gum is safe even in large quantities; however, we don’t need ot use much at all, which makes it such a great alternative to gluten. 

I love how it helps hold everything together and keeps things moist, especially in baking. In terms of health, I find xanthan gum to be pretty safe for most people when used in small amounts, though some individuals might experience mild digestive issues if they have sensitivities. For most of us, it’s a handy and generally healthy option for a smoother texture in gluten-free and low-carb cooking.

You can get it here on Amazon. And yes, you can use it in many other recipes that need a bit of thickening; it works literally in everything. Remember not to put too much thought, it’s quite powerful in its thickening ability. 

It has absolutely no taste or aftertaste, don’t worry.

Cook Banana Cottage Cheese Pancakes to Perfection

Heat a nonstick pan over medium heat. Add a little cooking spray, coconut oil, or butter. This prevents sticking.

Pour about 1/4 cup of batter for each pancake. Cover with lid for faster and more even cooking, just like I did in the image above. Cook for 2-3 minutes on the first side. Gently turn over with a spatula and cook for another minute or so on medium heat. You don’t have to cover them once they are flipped. 

Repeat with the next batch until all the batter is used up.

Freezing and Storing 

You can freeze cooked banana cottage cheese pancakes. Place them in a single layer in an airtight container. Separate layers with parchment paper.

To reheat, use a toaster oven or microwave. They’ll be ready in minutes. This makes banana cottage cheese pancakes perfect for meal prep.

Don’t prep the batter ahead. Ripe bananas can turn brown and affect the taste. Cook the pancakes right away for the best flavor and store them once they’re cooked.

These pancakes are made with just banana, cottage cheese and eggs. No flour or gluten in these delicious breakfast.

Ingredients
  

  • 1 ripe banana
  • 2 large eggs or 3 egg whites
  • 1/2 cup cottage cheese low fat or full-fat
  • 1 teaspoon natural pure xanthan gum powder (flat teaspoon, not heaped)
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract optional
  • Cooking spray coconut oil, or butter for the pan

Instructions
 

  • Blend cottage cheese in a blender if you want smooth pancake texture.
  • Mash the bananas in a large bowl.
  • Add eggs and cottage cheese. Mix well.
  • Stir in xanthan gum, baking powder and vanilla extract (if using). Xanthan gum will thicken the batter almost immediately.
  • Heat a large nonstick pan over medium heat. Grease lightly.
  • Using tablespoon dollop desiered size portions on to the hot pan, turn down the heat a little so they don't burn. Cover pan with lid and cook for about 5 minutes.
  • Open the pan, flit the pancakes, cook for another 5 minutes or until golden, remove and serve.
  • Serve with your favorite toppings.

This recipe will make around 3 medium size pancakes per serving (around 4 inches in diameter) or 5 small ones (around 2.5 inches in diameter) The size is up to you.

    These turned out so fluffy, I can’t believe it actually worked, I never used xanthan gum before so wasn’t sure, but it works and it’s great for sauces too like you said.

    1. Hey Scarlett, that’s great to hear, I was also skeptical at first when adding xanthan gum, but it worked really well. I used it alot if gluten free recipes and even ice creams.
