Banana Cottage Cheese Pancakes Without Flour

These pancakes are made with just banana, cottage cheese and eggs. No flour or gluten in these delicious breakfast.

Ingredients
  

  • 1 ripe banana
  • 2 large eggs or 3 egg whites
  • 1/2 cup cottage cheese low fat or full-fat
  • 1 teaspoon natural pure xanthan gum powder (flat teaspoon, not heaped)
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract optional
  • Cooking spray coconut oil, or butter for the pan

Instructions
 

  • Blend cottage cheese in a blender if you want smooth pancake texture.
  • Mash the bananas in a large bowl.
  • Add eggs and cottage cheese. Mix well.
  • Stir in xanthan gum, baking powder and vanilla extract (if using). Xanthan gum will thicken the batter almost immediately.
  • Heat a large nonstick pan over medium heat. Grease lightly.
  • Using tablespoon dollop desiered size portions on to the hot pan, turn down the heat a little so they don't burn. Cover pan with lid and cook for about 5 minutes.
  • Open the pan, flit the pancakes, cook for another 5 minutes or until golden, remove and serve.
  • Serve with your favorite toppings.

Notes

This recipe will make around 3 medium size pancakes per serving (around 4 inches in diameter) or 5 small ones (around 2.5 inches in diameter) The size is up to you.
