1teaspoonnatural pure xanthan gum powder(flat teaspoon, not heaped)
1/2teaspoonbaking powder
1teaspoonvanilla extractoptional
Cooking spraycoconut oil, or butter for the pan
Instructions
Blend cottage cheese in a blender if you want smooth pancake texture.
Mash the bananas in a large bowl.
Add eggs and cottage cheese. Mix well.
Stir in xanthan gum, baking powder and vanilla extract (if using). Xanthan gum will thicken the batter almost immediately.
Heat a large nonstick pan over medium heat. Grease lightly.
Using tablespoon dollop desiered size portions on to the hot pan, turn down the heat a little so they don't burn. Cover pan with lid and cook for about 5 minutes.
Open the pan, flit the pancakes, cook for another 5 minutes or until golden, remove and serve.
Serve with your favorite toppings.
Notes
This recipe will make around 3 medium size pancakes per serving (around 4 inches in diameter) or 5 small ones (around 2.5 inches in diameter) The size is up to you.
