Blend cottage cheese in a blender if you want smooth pancake texture.
Mash the bananas in a large bowl.
Add eggs and cottage cheese. Mix well.
Stir in baking powder and vanilla extract (if using).
Heat a nonstick pan over medium heat. Grease lightly.
Pour 1/4 cup batter per pancake. Cook 2-3 minutes per side, until golden brown.
Serve with your favorite toppings.
Notes
This recipe will make around 3 medium size pancakes per serving (around 4 inches in diameter) or 5 small ones (around 2.5 inches in diameter) The size is up to you.
