Ingredients
1cupfresh strawberriesdiced (frozen ok too, make sure to thaw out first and get read of moisture)
1cupunsweetened Greek yogurtor coconut yougurt for vegan version
1-2tbspmaple syruphoney, or organic stevia
100gdark cooking chocolate or chipsvegan chocolate for plant based version
1tspvanilla extractoptional
1tspcoconut oil
Sprinkle of sea saltoptional
Instructions
Mix yogurt, sweetener, and vanilla in a medium bowl. Fold in strawberries.
Spoon mixture into ice cube tray or candy molds; freeze 1-2 hours. Or you can just spoon it onto a tray leaving a little room to spread out. 1 heaped tablespoon per bite.
Melt chocolate in microwave-safe bowl in 30-second intervals; stir until smooth.
Dip frozen yogurt bites in melted chocolate; place on parchment paper.
Sprinkle sea salt if desired; freeze 30 minutes to set.
Store in airtight container in freezer up to 1 week.
Notes
Carbohydrates will be a little lower than 12g per bite if you use Stevia instead of honey or maple syrup. Around 7g per bite. Each serving is around 2 bites.
