Easy to make blueberry goat cheese recipe that is just like Trader Joe's but fresher and more delicious. Combination of creamy salty goat cheese with sweet blueberry compote is out of this world. You will definitely impress your guests without putting in too much effort.
8ozof goat cheese log, softened by taking it out of the refrigerator for at least 10 minutes before making it
1punnet of fresh blueberries
2tablespoonsof honey (30ml)
1tablespoonof lemon juice
1teaspoonof vanilla extract
1teaspoonof balsamic glazeoptional
1pinchof salt
Instructions
In a small saucepan over medium heat, combine blueberries, honey, lemon juice, lemon zest, salt, and vanilla extract. Cook while stirring frequently until the blueberries begin to burst and the mixture thickens slightly (about 5–7 minutes).
Remove from heat and allow the blueberry mixture to cool completely.
While cooling, place the goat cheese log on a piece of plastic wrap.
Once cooled, spoon about 1/3 of the blueberry mixture onto the plastic wrap in a log shape similar to that of the goat cheese.
Place the goat cheese log on top of the blueberry mixture and spoon the remaining sauce over it, allowing some to drip down the sides.
Use the plastic wrap to roll the goat cheese log tightly so that it’s evenly coated with the blueberry mixture. Smooth out any uneven areas.
Refrigerate for at least an 30 minutes ot an hour or overnight to allow flavors to meld.
When ready to serve, unwrap the cheese log and place it on a serving platter. Garnish with fresh blueberries and herbs if desired.
