Fresh, juicy watermelon feta salad with spring mix, basil, and red onion tossed in a light lemon olive oil dressing. This easy spring or summer salad is sweet, salty, and perfectly refreshing for warm days, BBQs, or a quick light meal.

Ingredients
  

  • 4 cups juicy watermelon cut into cubes
  • 1 cup of feta cheese crumbled
  • 4 cups of fresh spring mix leaves or any fresh greens you like
  • 1/2 cup of sliced cucumbers
  • ¼ cup red onion thinly sliced
  • 10 fresh basil leaves sliced
  • 2 tablespoons olive oil
  • 1 tablespoon of balsamic glaze or balsamic vinegar
  • 1 tablespoon lemon juice or lime juice
  • salt and black pepper

Instructions
 

  • Add washed spring mix greens to a large salad bowl.
  • Add watermelon pieces to the leaves.
  • Scatter over red onion and fresh basil.
  • Crumble goat cheese or feta over the top.
  • In a small bowl, whisk together olive oil, balsamic glaze, lemon juice, salt, and pepper.
  • Drizzle the dressing over the salad.
  • Toss gently and serve immediately.
