Crispy Gochujang Tofu Lettuce Wraps

Ingredients
  

Crispy Tofu

  • 1 block extra firm tofu (cut into batons or cubes)
  • 1 tbsp flour or cornstarch (most flours will work here)
  • 1 tsp garlic powder
  • 1 tbsp tamari
  • 1 tbsp sesame seeds

Honey Sesame Gochujang Sauce

  • 1 tbsp gochujang paste
  • 1 tbsp honey
  • 2 tsp tamari (or soy sauce)
  • 2 tsp water (to thin)

Crazy Good Almond Butter Sauce

  • 1/4 cup almond butter
  • 1 tbsp toasted sesame oil
  • 1 tbsp tamari
  • 2 tsp sriracha (more to taste)
  • 1/2 lime juiced
  • 1/4 tsp garlic powder, 1/4 tsp ginger powder
  • 2/3 cup warm water (+ more as needed to thin)

Lettuce Wraps

  • 6 leaves Boston lettuce, romaine lettuce
  • rice, cilantro, green onions, pickled carrots, radishes (optional)

Instructions
 

Bake the Crispy Tofu

  • Preheat the oven to 450 F. Prepare a parchment-lined baking sheet. Pat the sliced tofu dry with paper towel, getting out as much liquid as possible (a little moisture is OK).
  • In a large bowl, add tofu, 1 tbsp olive oil, flour, garlic powder, tamari and sesame seeds. Season with salt and pepper and toss very well to coat.
  • Arrange the tofu in an even layer on the prepared baking sheet. Bake for 30 to 40 min, flipping tofu halfway, until very crisp and golden.

Make the Honey Sesame Gochujang Sauce

  • In a medium bowl, add all ingredients. Whisk well to dissolve the honey and gochujang.

Crazy Good Almond Butter Sauce

  • In a medium bowl, add all ingredients. Whisk well to combine. Add more water to thin, as needed. Taste and add more tamari, garlic powder, or sriracha to taste.

Build Lettuce Wraps & Serve

  • Drizzle the Gochujang Sauce over the baked tofu. Toss to coat.
  • Arrange the lettuce leaves on a plate and top with the Gochujang Tofu, and any or all of the suggested toppings. Drizzle with the Crazy Good Almond Butter Sauce. Demolish & Enjoy!
