Mango, Lime and Chia Seed Pudding.

Ingredients
  

  • 1 ripe mango
  • 1/2 ripe banana
  • 1/4 cup fresh or canned pineapple chunks
  • 1 tbsp fresh lime juice
  • 1 pinch sea salt
  • 1 cup cold coconut water
  • 4 tbsp chia seeds
  • Optional but recommended: 1 tsp fresh grated ginger 1/2 tsp ground turmeric
  • 1 cup ice cubes

Instructions
 

  • In a high-speed blender, toss in everything except the chia seeds. Blend for 30–40 seconds until everything is creamy, whipped, and frothy.
  • Stir in the chia seeds. Make sure they’re mixed through the pudding well—we want every spoonful to be packed with goodness.
  • Pour this sunshine into glass mason jars or just a regular glass and pop them in the fridge for at least 20 minutes so the chia seeds expand and soften.
  • When you're ready to dive in, give it a good stir and enjoy your tropical escape straight from the jar!
