In a high-speed blender, toss in everything except the chia seeds. Blend for 30–40 seconds until everything is creamy, whipped, and frothy.

Pour this sunshine into glass mason jars or just a regular glass and pop them in the fridge for at least 20 minutes so the chia seeds expand and soften.
