Creamy lime & mango chia seed pudding layered with Greek yogurt for a refreshing, protein-packed breakfast. Be sure to check the tips below for storage instructions, frozen mango substitutions, and easy ways to add even more protein.
1cupripe mango chunksfresh or frozen and thawed out
1/2ripe banana
1/2fresh lime (juice sqeezed)
1/2cupcold coconut water
2tbspchia seeds
2tablespoonsnatural maple syrupor you can swap for low-cal. natural sweetener like Monk fruit or Stevia (use only 1/4 teaspoons per each serving)
1pinchsea salt
1/2tspgrated ginger(optional for healthy boost)
1/2 tspturmeric powder(optional for healthy boost)
Instructions
Blend mango chunks with banana, lime juice, maple syrup or your choice of sweetener, coconut water, sea salt, and ginger and turmeric if adding.
Stir in the chia seeds. Make sure they’re mixed through the pudding well—we want every spoonful to be packed with goodness.
Pour the pudding into a cup and refrigerate for at least 20 minutes, you can leave it even overnight if you like.
Layer the set chia pudding in your cup with Greek yogurt in between, you can layer which ever way you like it, or you can just mix it all in together.
Top with mango chunks, toasted coconut flakes and extra chia seeds if you like. I love adding a couple of fresh lime slices too.
Enjoy right away and if you make more than one serving then store the rest in the frigde covered well.
