Heat a large skillet over medium heat and add about 2 teaspoons of olive oil. This helps prevent the ground beef from sticking and ensures it cooks evenly.
Add the ground beef, diced onion, and diced green pepper to the skillet. Cook until the beef is browned and the vegetables are softened. It’s best to use ground beef with at least 15% fat for a keto diet, as it provides the necessary fat content to keep the dish satisfying and keto-friendly.
Once the beef is browned, add your taco seasoning and stir well to coat the beef evenly.
Add the green chiles and stir to combine. Cook for a few more minutes until the flavors meld together.
In a greased casserole dish, lay down a layer of keto corn tortillas from my recipe linked in the notes or store bought. You can cut them into strips or leave them whole, depending on your preference.
Spread half of the seasoned ground beef mixture evenly over the tortillas. Sprinkle a generous layer of shredded cheese on top.
Repeat the layers: tortillas, beef mixture, and cheese.
Pour the cream over each layer of cheese to ensure that the layers are soaked with mosture and don't end up dry.
Sprinkle chopped green onions for extra flavor and color.
Bake the casserole in a preheated oven at 375°F (190°C) for 20 minutes covered with foil, then remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.
