Keto Chicken Broccoli Casserole.

Creamy, cheesy casserole made with broccoli, chicken breast and delicious cheeses.

Equipment

1 Baking Dish (Pyrex with lid is ideal for storing leftovers) Approximately 9x13inch for 6 servings
1 Oven or Pressure Cooker like Instant Pot Duo (its much faster in Instant Pot so the times will differ to the oven instructions)
1 large mixing bowl
1 mixing spoon

Ingredients
  

  • 2 lbs chicken breasts cubed (or shredded cooked chicken)
  • 4 cups broccoli florets fresh broccoli is great, but frozen works too
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese mozzarella cheese works too
  • 1 cup grated parmesan cheese this will add a nice kick to the dish
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • Salt and pepper to taste

Optional toppings:

  • 1/2 cup crushed pork rinds for that extra crunch!
  • 1/4 cup sliced almonds

Instructions
 

  • Preheat your oven to 375°F (190°C). It’s a good idea to make sure your oven is properly calibrated for best results.
  • In a large mixing bowl, mix cream cheese, sour cream, chicken broth, garlic powder, and onion powder until smooth. It's best if you take these ingredients out of the fridge for at least 30 minutes before mixing them.
  • Add chicken, broccoli florets, and half the cheeses to the large mixing bowl. Stir well to combine everything thoroughly.
  • Transfer to a greased casserole dish or baking dish. Top with remaining shredded cheddar cheese and parmesan cheese.
  • Bake for 30-35 minutes until bubbly and golden. The cooking time might vary slightly depending on your oven. Keep an eye on it!
  • If using, sprinkle crushed pork rinds and almonds on top. Bake for 5 more minutes. This adds a fantastic texture and flavor!
