Ingredients
  

  • ½ cup cottage cheese full-fat or low-fat
  • ½ medium ripe banana or one small one
  • 1 tablespoon chia seeds
  • 1 tablespoon water
  • 1 teaspoon matcha powder
  • ½ teaspoon pure monk fruit sweetener for a lower-sugar option, or maple syrup if you prefer
  • 1 teaspoon vanilla extract
  • 1 teaspoon hemp seeds optional

Instructions
 

  • Stir the chia seeds and water together and leave for 5–10 minutes.
  • Blend the cottage cheese, banana, matcha powder, vanilla sweetener and hemp seeds until smooth.
  • Stir in the soaked chia seeds.
  • Transfer to a bowl or jar and serve immediately, or chill for 30 minutes for a thicker texture.
  • Finish with your favourite toppings.
