Ingredients

  • 3 large cucumbers
  • 2 tablespoons black or rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon brown sugar
  • 1 clove fresh garlic (minced or grated)
  • 1 teaspoon red chili flakes or more if you like it more hot
  • 1 tbsp sesame seeds to garnish

Instructions

  • Prepare the Cucumbers: Start by washing your cucumbers thoroughly. Cut them into quarters lengthwise and then chop them into bite-sized pieces. Place them in a bowl and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture.
  • Make the Dressing: In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar (if using), minced garlic, and red chili flakes. This dressing is what gives your salad that irresistible tangy kick!
  • Combine Everything: After the cucumbers have released some moisture, rinse them under cold water to remove excess salt. Drain well and add them to the bowl with your dressing. Toss everything together until all the cucumber pieces are well-coated.
  • Garnish and Serve: Transfer your spicy cucumber salad to a serving dish and sprinkle sesame seeds on top for an added crunch. Enjoy it immediately, or let it chill in the fridge for about 30 minutes to allow the flavors to meld.

Notes

You can also use fresh chilis if you have them, it will be even nicer and crunchier.
