For the Cauliflower Steaks:
1
large head of cauliflower
3
tbsp
olive oil
Salt and freshly ground black pepper
For the Basil Salsa Verde:
2
cups
fresh basil leaves
1/4
cup
extra-virgin olive oil
2
tbsp
white wine
1
tbsp
capers
drained
2
garlic cloves
roughly chopped
Zest of 1 lemon
Salt and pepper to taste
Instructions
Preheat oven to 425°F (220°C) or air fryer to 375°F (190°C). Line baking sheet if using oven.
Slice cauliflower into steaks; brush both sides with olive oil; season with salt and pepper.
Roast in oven for 20–25 minutes (or air fry for 15–18 minutes), flipping halfway through.
Blend basil salsa verde ingredients until chunky; adjust seasoning as needed.
Plate roasted cauliflower steaks; top generously with salsa verde; serve immediately.
