8-Minute Chocolate Cottage Cheese Mug Cake (Low-Sugar)

This Easy Chocolate Cottage Cheese Mug Cake is rich, fudgy and high in protein, with a delicious molten dark chocolate center. Made with cottage cheese, almond flour and simple ingredients, it's an easy single-serving chocolate dessert that's ready in minutes. Baked in the microwave in just 2 minutes.

Ingredients
  

  • cup cottage cheese — about 3 oz 80–85g
  • 3 tbsp fine blanched almond flour
  • 1 tbsp cocoa powder
  • 1 small egg or 1/2 large egg (if making 2 servings, just use 1 large egg for 2 servings)
  • 3 tbsps powdered allulose or unrefined coconut sugar or raw sugar
  • 1 tsp vanilla
  • 1 oz about 30 g 70% dark chocolate total — half melted for the batter, save half unmelted to add to the center
  • tspn baking powder
  • 1 tspn coconut oil or any oil of your choice to grease the mug (opitonal, but helps the mug cake not to stick to the edges as much)

Optional add ons: 1 teaspoon of peanut or almond butter and raspberries or slivered almonds.

Instructions
 

  • Melt half of the dark chocolate in the microwave. (save the other half for the center, unmelted)
  • Add the melted chocolate, cottage cheese, almond flour, cocoa powder, allulose, egg and vanilla to a blender. Blend until completely smooth.
  • Lightly grease a microwave-safe mug or small ramekin and pour in the batter.
  • Push the remaining dark chocolate into the center. Add 1 teaspoon of optional peanut butter, then gently cover the filling with a little batter.
  • Microwave for 90 seconds to 2 minutes, depending on your microwave and filling. Let the mug cake sit briefly before serving, then enjoy warm.
  • Top with a handful of fresh raspberries if you like.

Notes

  • Chocolate: I use 70% dark chocolate. Melt half for the batter and save the remaining half for the molten chocolate center. 
  • Peanut butter: Optional. Add 1 teaspoon of sugar-free peanut butter to the center with the chocolate. My peanut butter version needed closer to 2 minutes in the microwave.
  • Raspberries: Add a few fresh raspberries to the center or serve them on top.
  • Sweetener: I use powdered allulose to keep the added sugar lower. Raw sugar, brown sugar or coconut sugar can be substituted 1:1.
  • Microwave timing: Start checking around 90 seconds. Microwave wattage varies, and the peanut butter version takes a little longer. See my detailed testing tips above for more information. My microwave is around 1100W and it took around 2 minutes with peanut butter in the center.
